Thanksgiving Dinner Menu

Like most of you, I have had my menu planned for Thanksgiving Dinner since the beginning of November. I asked for the input of my husband and son and was SHOCKED when they gave me the list of food that they wanted.

Bubba and I plan on running the local Turkey Trot 5k in the morning, so we will be celebrating Thanksgiving with just us three (although my in-laws were invited but declined). Generally, after running a 5k, we havehomemade yogurt and some type of pancakes for breakfastusually banana pancakes (with spinach). But since its Thanksgiving, Bubba has asked for Pumpkin Pancakes with spinach added. So I am currently working on modifying this recipe to make it lower carb, gluten free, and to be able to add spinach to it.

But on to our dinner menu

List most American families, we will be having roasted turkey for dinner. I love to cook the turkey breast in our portable roaster that sits on the counter top, allowing us to smell it all day long but also freeing up the oven for other dishes.

Along with the turkey, the typical American side dishes include stuffing and mashed potatoes. We will be enjoying those traditional dishes with a twist. Hubby has requested cauliflower stuffing and Bubba requested mashed cauliflower. These dishes are PACKED with veggies and flavor while eliminating extra carbs (so we can enjoy dessert GUILT FREE!!).

But, in case you think we will be eliminating ALL carbs, you are MISTAKEN. We will be enjoying homemade dinner rolls with apple butter throughout the day AND at dinner.

And of course, you CANT forget DESSERT!! The boys have BOTH requested pumpkin pie

And what about the LEFTOVERS? you may ask. Well, I have a plan for THOSE too!! No one wants the same reheated leftovers for days on end, so lets make some YUMMY dishes with them!!

For the leftover turkey, we will be enjoying pot pie!!

While you plan your Thanksgiving menu, remember the TRUE meaning for Thanksgivingto give thanks TO GOD for ALL He has done throughout the ENTIRE year, not just one day. If you have worked hard to develop and maintain a healthy lifestyle throughout the year, dont blow it all on ONE MEAL or for ONE DAY. Use reasonable portion sizes, dont skip your workout! ENJOY your food, but more importantly, ENJOY THE PEOPLE who surround you on this special day.
