Staple Italian Sausage & Onions

May you have all the blessings underneath the tree or from loved ones. I am blessed to have learned this Italian Sausage and Onions recipe from my Ma. The dish is perfect to eat with rice or in your favorite baguette with a butter spread. This sausage and onions recipe was the perfect gift this year and I have been making it at least once a week. It is customizable and you can literally toss in any vegetable or cheese, and it would pair well. Ingredients:

  • ½ cup chopped parsley
  • 2 tbsp minced garlic
  • ½ tsp black pepper
  • 2 tbsp tomato paste or ketchup
  • 2 oz baby tomatoes
  • 2 lbs. hot Italian sausage

Directions:

Slice one onion and mince about 3 cloves of garlic.

Heat a pan on medium high heat for one minute. After it is warm enough toss your Italian sausage directly into the pan without oil. Since this is a pork dish, there will be plenty of oils released from the sausage during the cooking process so adding extra will not be necessary.

Keep pan frying for about 5-8 minutes and break up all the sausage parts into bite sized pieces. The constant stirring of this dish will ensure everything is evenly cooked.

Toss onions and garlic in and stir everything together well. Afterwards, add in your black pepper and toss everything to combine for 3-5 minutes. Adjust heat as needed to ensure garlic does not burn.

Pour in 2 tbsp of ketchup or tomato paste if you are feeling a bit fancier and mix everything well for 3-5 minutes.

Continue tossing everything together and the top with fresh parsley after the sausage has taken on a slightly charred color. You can always cut a piece open to check for the doneness.

Turn off the heat and serve after letting it cool for 5 minutes. Pack away for meal prep on another day if any leftovers (unlikely).

Fun Fact: When I was younger, we used a lot of baby fingerling sausages in many of our dishes. My favorite dish with this was the Asian fusion spaghetti that was slightly sweet with fish sauce in it. My Ma prefers this fresh sausage purchased directly from the meat counter at our local market. It is well made and delicious.

The Lesson: I have not had the chance to cook much with Italian sausage before, so watching the process was enlightening and taught me about how versatile this protein could be. It only took a few minutes and a delicious main dish was created!

Side Note: The customizing options for this dish are vast and varied. Cheese or other vegetables like tomatoes and celery would be a great option to add a crunch to this dish. Simply toss your preferred vegetables towards the end and cover to let the steam cook as the dish cools down.

  5. Turn off heat and add parsley on top.
  6. Serve immediately or let cool and pack away for meal prep on another day.
