I fill this cottage cheese breakfast bowl with the colorful vegetables listed below, protein-rich boiled egg, and then top with everything bagel seasoning for extra tasty flavor!
- Persian cucumber
- Grape tomatoes
- Boiled egg
- Chives/scallion greens or parsley
Variations:
- Use regular cucumbers or English cucumbers if you can’t find Persian.
- Add a variety of different vegetable of choice, including bell pepper, or any other fun ideas, like roasted sweet potato
- Swap grape tomatoes for cherry tomatoes.
- Add nuts for extra protein, such as pistachios, pine nuts or almonds
- Use Greek yogurt if you’re not a cottage-cheese fan.
- Top with salt and Italian seasoning if not a fan of everything bagel seasoning

– 1 Persian cucumber, sliced
– 5-10 halved grape/cherry tomatoes
– 1 hard boiled egg
– 1 tsp chives
– Parsley, pepper, and everything bagel seasoning, to taste
