Recipe - Blueberry Cottage BowlYes, I'm going out on a limb here, knowing that ½ of the population doesn't like cottage cheese...BUT, you can substitute yogurt if you don't like it! I've been trying to be consistent watching my weight for the past year. Two of the biggest points that I learned when doing the previous diet I was on, was eating 5-6 times a day and drinking at least 90 oz of water helped me tremendously. Prior to that diet, I would go all day without eating, only having dinner with Ray - that was it. When you do that, your body goes into fat-save mode and it holds onto everything you eat because it thinks you may not feed it again.I am a total believer in this because when I was in college, nutrition was a big focus for us when it came to my nursing curriculum. We learned that breakfast gets your body started, lunch keeps it going, as do healthy snacks a couple of times a day...and dinner, it's a must but, early evening is best.Back to the point, I have moved to merely watching what I eat, documenting everything I eat and in one week, lost 7 pounds! I am eating 'real food' and not on the previous diet I was on and this seems to be working fabulously. I realized that I am going to have to eat 'normally' at some point - I can't live on 'packets' the rest of my life! While those packets were definitely a healthy version of foods that we eat, it was easy to become dependent upon them.One day, I will write about this journey in more detail but, for now, this is a recipe of a snack that you have mid-afternoon or as an evening snack. I LOVE this and will make this several times a week, I am sure of that! Without further ado, here is the recipe:1/4 C. Blueberries1 T. Sugar-free maple syrup1 t. low-fat (Swerve) brown sugarDash of cinnamon½ C. cottage cheese (or vanilla or plain, fat-free Greek yogurt)Preheat oven to 350º. In a small ramekin dish, combine the first 4 ingredients. Bake for 22 minutes. Allow to cool and then top the cottage cheese (or yogurt) with the blueberries...Simply DIVINE! Bon appétit!
