When I am feeling like throwing together a low-effort dish, oven baked nachos are a phenomenal go to. Of course there’s times where I like to grab some tortilla chips and salsa and call it a day, this recipe comes together so quickly and tastes just so darn good, I know it’s worth the extra few minutes. Just grab your ingredients, throw them together, and bake!

This is the perfect appetizer or snack for the kids when they get home from school, when you’re craving a meaty, cheesy, zesty snack, or if you have company over. It’s a real crowd pleaser. And when I feel like going the extra mile, my queso dip adds another layer that really takes this dish over the top.

  • 1 bag tortilla chips
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 1 package taco seasoning
  • 1 cup corn kernels
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 tomato, diced
  • 1 small red onion, diced
  • 1 avocado, diced
  • 2 jalapeños, sliced 
  • 2 tbsp fresh cilantro leaves
  • salt, to taste

How to Make Oven Baked Nachos // The Steps

Step 1: Heat the oven to 400° F.

Step 2: In a pan over medium heat, sauté the ground beef and corn kernels with the taco seasoning and a pinch of salt until brown, about 3-5 minutes.

Step 3: Arrange the tortilla chips on a large sheet pan and cover with the ground beef and corn mix, then sprinkle the cheese on top. Place in the oven to bake for 5 – 8 minutes, or until the cheese is melted.

Step 4: Take out the oven and top with diced tomato, red onion, avocado, jalapeños, and cilantro.

Nachos are a dish that can be made with any ingredients you have on hand. You can add guacamole, salsa, sour cream, onions, olives, beans, or any other toppings you like. If you’d rather use a different chip from tortilla chips, you can use pita chips, sweet potato chips, or zucchini chips. Oven baked nachos are meant to be altered to suit what you like and what you have in your refrigerator!

Can I use chicken instead of beef?

Yes, you can use chicken mince and cook it in the same way, or buy shredded chicken and top the chips with that. You can really use any meat, be it pork mince, shredded beef, steak, or make it vegetarian by using a meat free alternative.

Do I need to serve this straight away?

You can make the mince and chop the tomato and onion before and then just assemble it and melt the cheese in the oven when you’re ready to serve. If you let it stand, the chips will get soft and the cheese will get chewy.

Can I use a different cheese?

Of course! You just want to use cheeses that melt nicely, so feel free to use any kind you love the most. Feta can also be delicious when added at the end.

How to Store Oven Baked Nachos //

You can store your nachos in the refrigerator, wrapped tightly, for up to 3 days but it’s important to note that they will lose their crispiness within an hour of making them. I would recommend that you only assemble as much as you plan to eat in a single sitting and any extra ingredients can be kept in the fridge until you’re ready to make another serving.

If you’re reheating your assembled nachos, stick the back in the oven for 10 – 15 minutes, or until the cheese bubbles.
