General Tso’s Chicken

Here’s to another ‘What’s for Dinner, Wednesday?’ This recipe is so quick and simple, it will hopefully become one of your go-to dinners. I’ve had several people request this one and I’ve honestly made it several times over the last few weeks. It’s just so easy!

Here’s what you’ll need:

1/4 Cup General Tso’s Sauce (Aldi)

1 Pkg. Basmati or Jasmine Rice (Aldi)

Chicken

1 Pkg. Asian Vegetable Medley (Aldi)

I also added roasted peanuts and red pepper flakes to taste.

Please note the measurements above are for one or two people.

Prep Work:

I cut the chicken into bite size pieces and let it marinate in the General Tso’s sauce during the day.

Let’s get cooking:

Start by cooking the vegetables in the microwave for about 5 minutes (If you buy a different bag, check the instructions on the bag.)

While the vegetables are in the microwave, start cooking your marinated chicken. Once the chicken is done, pour some peanuts and red pepper flakes (to taste) into the skillet and give it a good mix. Add the whole bag of steamed vegetables and mix until everything is coated. Place the rice in the microwave to cook for 90 seconds (depends on the bag you buy).

While the rice is cooking, let the vegetables and chicken cook and heat up for just a moment. Once the rice is finished, plate and enjoy.
