A Childhood Nostalgia Meal : Egg in a Hole!

Greetings, dear meows!

It’s been far too long since I’ve written anything here… Life is just…Well. Complex. I’m doing my best to get things back on track after a very tumultuous end of 2022 and start to 2023. Now that things are sort of starting to level out, I find that in terms of cooking, I’m really reaching back to my roots and craving all sorts of flavors and dishes that remind me of the simpler times of childhood.

Since we didn’t have a lot of money when I was a kid, one of the things we used to have a lot for dinner was breakfast foods. LOTS of egg dishes, cream of wheat, pancakes and sometimes even French Toast! My mom did her best to keep my sister and I fed without ever making us feel like we didn’t have much to eat. I mean we always had something, even if it wasn’t always the best. But it was my father who introduced me to a dish known by many names around the world. I know it as Egg in a Hole.

At it’s purest form it’s a piece of bread, with a hole cut out of the middle and filled with a cracked egg, then pan fried till crispy and the egg is cooked to your liking. And that’s basically it. As a kid, it was a fun and unique way to enjoy eggs and toast, with the cut out circles of bread being pan fried along side it, making it perfect for dipping into the yolk.

I was craving the daylights out it the other day and decided to put my Chef skills to work and make some for dinner! I think having breakfast for dinner is fun and different. And also very satisfying. Who says you can’t have breakfast for dinner? I mean, eat what you want, when you want it! That never stopped Lois Lane from eating a cheeseburger with everything on it and a glass of freshly squeezed orange juice at 9am, right? But I digress… 😛

Me OW was that delicious! And I’m glad I made that cheddar cheese frico to go with it! It added a nice crunch and sharpness to the dish and balanced out the savoriness from the chorizo and ham. The avocado really pulled it all together and this was a fine dinner indeed! Let’s have one more look at the plate, shall we?
