3 Quick and Healthy Dinner Ideas: Veggie

The winter months are well and truly upon us, which only means one thing, cosy food. There is nothing I love more than coming in out of the cold to a good wholesome hearty meal. As a vegetarian, I often lose inspiration for my meals so I thought this would be a good post to do for my fellow veggies that feel the same. Below are 3 of my go-to veggie dinner recipes during the colder months. Enjoy! x

Buddha Bowl

Serves 1

First up is the Buddha Bowl. The beauty of a Buddha bowl is that you can literally throw any of your favourite foods in a bowl. The star of this recipe is the sauce; it gave me major satay sauce vibes. There are tons of actual recipes online for the perfect alternative satay sauce but I was just working with what I had in the fridge

Bowl:

some roasted veggies

1 small red onion

chickpeas (seasoned with cumin and paprika)

½ avocado

3 baked falafels

a grain of choice, again I went for basmati rice

Sauce:

tbsp. smooth peanut butter

2tbsp soy sauce

tsp water

Tofu Curry:

Serves 2

The classic curry dish. This dish is really quick and easy to make! Nothing warms me up more than a big bowl of curry. This is also a great recipe for those nights when all you want to do is order a takeaway curry.

2 tbsp. cooking oil

1 red onion

1 red pepper

2 tbsp. curry powder

1 tsp. cumin powder

1 tsp. ground paprika

1 tin coconut milk (400g)

198g Cauldron Vegan Organic Tofu (99g pp)

2 handfuls of spinach

Serve with your grain of choice (I went for basmati rice)

Green Lentil ‘Spag Bol’:

Serves 2

Another classic dish. Spaghetti Bolognese was something I definitely missed when I first became a vegetarian. The green lentils have the same texture as beef mince, in my opinion, and are so good for you. This is also a very quick dish to throw together at the end of the day.

2 tbsp. cooking oil

1 red onion

1 red pepper

2 cloves of garlic

1 tin of chopped tomatoes (400g)

2 tbsp. tomato puree

1 pack cooked green lentils

2 handfuls of spinach

360g wholemeal spaghetti (180g pp)
