Salmon Burger with Dill Salad Slaw
This salmon burger is so fresh, flavourful and quick to make, it’s another win for easy weeknight dinners! Ingredients:
For Salmon Burgers:
1 tbsp oil
500g skinless salmon fillets, coarsely chopped
2 tbsp fresh dill, coarsely chopped
1 tbsp fresh parsley, coarsely chopped
2 green onions, chopped
1/3 cup Panko crumbs
1 egg, white only
1/2 tsp garlic powder
1/2 tsp salt, or to taste
1/2 tsp black pepper, or to taste
1 package Taylor Farms Dill Pickle Salad Kit
1 mini cucumber, ribboned
4 sesame brioche burger buns
Optional: Mayo
Directions: Place coarsely chopped salmon fillets, dill, parsley and green onions into food processor. Pulse until just combined. Place the salmon mixture into a medium bowl. Add egg white, Panko crumbs, garlic powder, salt and pepper and mix until well combined. Shape into 4 patties and place in fridge for 10 minutes. Meanwhile, combine Taylor Farms Dill Pickle Salad Kit ingredients in bowl and set aside. Heat 1 tbsp oil in pan. Cook patties for 8-10 minutes, turning at halfway point, or cook until your liking. If using, place mayo on base of burger bun. Layer on salmon burger. Layer on Dill Pickle salad slaw. Layer on cucumber ribbons.
