What’s in Harissa?
Harissa paste or seasoning originated from Tunisia and is a blend of a variety of spices that include dried chilies, garlic, citrus and cumin to name a few. If you like spice, you’ll love Harissa. Those that don’t like their dish too spicy can reduce the amounts listed below to their liking.

Harissa Chicken with Rice

Ingredients:


4 tbsp oil, divided

1 medium onion, finely chopped

1 1/3 cup water

4-6 pieces bone in, skin on chicken thighs/drumsticks

3 tbsp harissa seasoning

3 dashes cinnamon

3 cloves garlic, minced

1 cup basmati rice

1 bay leaf

12 dates, diced

1 orange zested

1/2 an orange, juiced

Salt and pepper, to taste

garnish: sliced almonds, crushed pistachios and/or fresh mint
Directions: Preheat oven to 400F. Season chicken with salt and pepper in large bowl. In small bowl, mix 2 tbsp oil with 2 tbsp harissa seasoning and pour over chicken. Mix until fully coated. In large skillet, heat 2 tbsp oil on medium high heat. Add onion and reduce to medium heat. Add a pinch of salt and saute until onion is soft and translucent (5min). Add garlic and mix for an additional minute. Add 1 tbsp harissa seasoning (add another if you want more spice or reduce by half for less spice) and ensure onions are coated. Add rice and stir for 1-2 minutes. Add dates, orange zest and orange juice. Add salt if needed. Combine well. Add chicken to pan, skin side up and pour water around chicken. Add bay leaf to skillet. Place uncovered in oven for 35-40 minutes until chicken is cooked to safe temperature. Remove pan, garnish with nuts and fresh herbs.
